Very pale salmon pink. Hand-picked pinot noir, whole bunch-pressed, barrel fermented; perfumed bouquet of rose petals; SO2, no malolactic fermentation, heavy chardonnay lees topping barrels, wild strawberries. Every boxed ticked, particularly length. The magic bullet is the inclusion of 2% heavy chardonnay lees. I’m giving this wine a run for multiple purposes, largely consumption but also the odd splash here or there for cooking, which leads on to my final observation that this is the ultimate multipurpose wine for Asian cuisine.
