#Repost @shirazzmatazz・・・Dappled Wines Champs de Cerises Upper Yarra Chardonnay 2017Yarra Valley, Victoria 🇦🇺After a 4 month hiatus, tonight calls for an overdue return to Chardonnay with this bottle from @dappled_wines and winemaker Shaun Crinion.Dappled Wines was established back in 2009, with a focus on highlighting Chardonnay and Pinot Noir from different sites across Victoria’s Yarra Valley. Shaun’s wines have received much acclaim since the label’s inception and rightfully so.With an approach to winemaking influenced by vintage and fruit, Shaun’s winemaking style leans towards the traditional, but emphasises a hands off approach to express fruit and terroir, with his wines seeing minimal additions prior to bottling.High quality fruit from local growers, small yields, small batch winemaking using traditional techniques - there’s much to like from the onset without even opening a bottle. But where’s the fun in that? 😋To make his 2017 Champs de Cerises Chardonnay, grapes were sourced from a single block in the Upper Yarra Valley planted in 1997, consisting of Dijon clones 76 and 96.Grapes were hand-picked, with whole bunches lightly crushed by foot then seeing a long pressing straight to oak (25% new barriques, puncheons and demi-muids). The must was wild-fermented, with no temperature control or stirring, then matured for 10+ months on lees. Racked clean and bottled by gravity, it was unfined and lightly filtered. 📝On the nose, aromas of freshly grated lemon rind, white peach, warm honey 🍯 and struck match entice, leading to a palate of sun ripened lemon 🍋, grapefruit pith, hints of peach 🍑 and nectarine, slight toast and the lightest touch of butterscotch. Medium bodied, it’s textural, with a creamy mouth feel kept fresh by a bright acid line and a clean mineral edge. The finish is lengthy, with fading fruit and slight oak derived notes. 🤤This is a lovely Chardonnay and one of the best I’ve had this year. Coming out of the heart of the Hunter Valley, their wines encapsulate the message of being beautiful and strong. Their 2019 GSM, I think, sums this up perfectly.⁠•⁠Nicely balanced on the nose. A nice freshness to it. Red, ripe fruits, cranberries, cinnamon dusting, lavender even. The palate, nicely delicate, opposed to other GSM’s there is a far more amount of finesse within this bottle. A close second in my mind is the dumbfounding decision to remove Cabernet from Giaconda. Its not something I drink a lot but every time I crack a bottle I highly enjoy it. I’ve had this @johnduvalwines 2016 SGM has been in my rack for a couple of year and I think I cracked it at the perfect time and it went down a treat. #Repost @wine_is_my_friend_72・・・Tonight I’m cooking butternut pumpkin and a capsicum (for 2 different dinners and flavours) stuffed with lamb, black rice, chilli, garlic, onion, fresh mint, thyme and parsley from my garden, spinach, nutmeg, pine nuts, a splash of Grenache and Persian feta and my mind was saying have a fruity dry white but my tastebuds were saying have a Rosé instead. My tastebuds won because my mind is rubbish at times when it comes to food and overthinks things. 😂🤣 The plan is to have half the stuffed pumpkin tonight and I thought the sweetness of the pumpkin with the heat of the chilli, the saltiness of the feta and all those other flavours combined, this beautiful @trollcreekwines 2020 Cabernet Franc Rosé is definitely the winner. I tried it with the meat stuffing alone and those gorgeous florals and juicy fruit flavour rounded out the flavours in the meat and totally smashed the heat in the chilli and created a totally different mouthfeel to having the meat alone. It’s amazing how good wine can completely change how food tastes and how it interacts with the acids, spices etc and the mouthfeel. I will be definitely ordering a dozen of these for Spring/Summer as my mind is already ticking over with food ideas. Love it!! Back when such irresponsible and clearly dangerous outings like trips to wineries with your mates were not forbidden.After engaging in my specialty of talking nonsense with the winemaker for a little while, we were given a tour of the family’s private cellar. Upon passing a row marked “1975” and pointing out that this was my birth year, wine maker Simon (son of Paul Jnr) grabs a bottle and says “let’s see how it’s looking”.Sitting down to drink the 1975 (see second pic) was one of those wonderful surprise moments that life spits out from time to time, when you show genuine interest in the produce of generously spirited wine makers. But whilst sitting drinking what I thought was tremendous Cabernet, my good friend @melbourne_winetragic (who has a phenomenal palate) had a look on his face that suggested something wasn’t quite right. The sort of expression you had whilst listening to Milli Vanilli and wondering if it’s really their voices. Or seeing Jobe Watson go from being an average player to winning a Brownlow medal, and knowing that, clearly, something doesn’t add up.@melbourne_winetragic asks “is there something else in this?” to which Simon says “nah, it’s pretty much 100% Shiraz”. Which was a touch odd, given it was labelled Cabernet Sauvignon. As it turns out, in the 70’s Australians only wanted table wine that was labelled Cabernet or Claret, so pretty much everything was labelled as one or the other, regardless of the grape used.I’ve crapped on too much, so let me just say that this now accurately labelled Shiraz is a pitch perfect expression of old vine Heathcote Shiraz, from vines dating back to the 1950’s produced by a succession of Osicka family members. There surely isn’t a more distinctive and savoury Pinot in the country. Absolutely amazing. Beautiful fruit, cherry, raspberry, almost raspberry tea. Earthy, wet earth, truffle and a hint of spice on the finish. The tannins are particularly pleasing, sets you up for a long finish. Great with some gamey meat, swallows up that tannin. In fact the wine is gamey itself. So venison was a great pair.
